Cauliflower Rice Stir-Fry

This is a great low-calorie and low-carb dish that is very satisfying and super easy to prepare.

Cauliflower is high in fiber and antioxidants and known to fight cancer, so it’s super healthy for you.

It is one of those dishes that you can prepare a large batch of and reheat when you’re ready to eat.

Ingredients:

1 tablespoon olive oil 

1 onion, chopped

1 tablespoon ginger, minced

2 cloves garlic, minced

2 cups cabbage, chopped

2 cups sugar snap peas, sliced in half 

2 cups celery, chopped

3 cups cauliflower rice

2 tablespoons soy sauce or tamari

dash of cayenne

+salt

+pepper

Directions:

Heat a nonstick large pan to medium and add olive oil, onion, and salt. Sauté for a couple of minutes then add ginger and garlic. Sauté for a minute and add cabbage, sugar snap peas, and celery. Keep sautéing until the cabbage shrinks in half, then add the cauliflower rice, soy sauce, cayenne pepper, salt, and pepper to taste. Sauté until tender and golden brown. Sprinkle with some parsley and serve.
