Scrambled Tofu

I have been asked many times about vegan breakfast options and scrambled tofu is one that always comes to mind. It is very tasty and the texture is so perfect! The spices mimic the flavor of real eggs and when my son tried it for the first time he couldn’t believe it wasn’t real eggs…

Ingredients: 3-4 servings

1 tablespoon olive oil 

1 small onion, chopped

1 clove garlic, minced

1 block firm tofu, 16 oz / 454 g crumbled

1 teaspoon turmeric

1 teaspoon onion powder

1 tablespoon nutritional yeast

+Salt

+Pepper

Directions:

Heat a nonstick pan to medium and add olive oil & onions, sauté for a few minutes until translucent, then add garlic, and sauté for another minute. Next add tofu, turmeric, onion powder, and nutritional yeast, salt & pepper to taste. Sauté until the tofu starts to get golden brown, just like real scrambled eggs.

Serve immediately with your favorite side salad. I like to serve it with Israeli Salad.
