Gluten-Free Chunky Granola

Chunky Gluten-free Granola is truly a treat! This recipe is so extremely good and so easy!

These are pantry ingredients that I always keep in the house. It takes 5 minutes to prepare the batter and 30 minutes in the oven. Really worth the effort. My kids like to snack on it as is or eat it in a bowl with some almond milk. no preservative and great healthy ingredients.

Ingredients:

3 cups gluten-free oats

1/2 cup pecans

1/2 cup walnuts

1/2 cup shredded coconut

1/4 cup flaxseed meal

1 teaspoon cinnamon

2/3 cup pure maple syrup

1/3 cup coconut oil, melted

3 tablespoons hot water

1 tablespoon vanilla extract

Pinch of salt

Directions:

Heat oven to 350 F

Line a baking sheet with parchment paper.

Take a large bowl and add all the dry ingredients: oats, pecans, walnuts, coconut, flaxseed meal and cinnamon, mix to combine.

Take another bowl and add the wet ingredients: maple syrup, coconut oil, hot water, vanilla extract and a pinch of salt, whisk to combine.

Pour the wet ingredients to the dry ingredients and mix thoroughly so that its all coated evenly.

Pour the batter onto the baking sheet and press tightly with your hands.

Bake in the oven for bout 30 minutes, until its all golden brown.

Let it cool completely before breaking the granola into chunks with your hands.

Store in a glass jar on the counter.
