Vegan & GF Graham Crackers

Dreaming about the perfect crunchy cookies to dip in your tea or coffee? I’ve got you covered with this perfect recipe!! Truly a success! I am not a big fan of creamy desserts—I’d much rather have a dry crunchy cookie instead…seriously! Although the world situation with Coronavirus is a crazy one, I am grateful that it has given me this time to create new recipes for my family (actually for myself….😉…who am I kidding?)

Ingredients:

1 cup almond flour

2 1/2 cups gf flour blend 

3 tablespoons flaxseed meal 

1 teaspoon baking powder

1/2 teaspoon baking soda 

1 teaspoon cinnamon

1 teaspoon vanilla extract

1/2 cup almond milk

1/4 cup pure maple syrup

1/4 cup coconut oil

Directions:

Heat oven to 375 F.

Mix all the dry ingredients in a bowl. Mix all the wet ingredients in another bowl. Add the dry Ingredients into the wet ingredients and mix until combine. (You can also make the dough in the food processor, starting with the dry ingredients, pulse a couple times and then add the wet ingredients and mix until combine.)

Roll the dough between two pieces of parchment paper. Use your favorite cookie cutter to cut the dough into shaped cookies.

Bake in the oven for about 20-30 minutes until the cookies are golden brown and hard. Let them cool down completely before serving. Store in a glass jar on the counter.
