Split Pea Soup

Split Pea Soup is the perfect soup to make when you don’t have much “fresh” produce in the house. I always keep split pea in my pantry for rainy days, literally…LOL.. Not only when it physically rains, but for times when we can’t leave the house, it’s a great healthy soup to make with just a few ingredients.

Ingredients:

2 tablespoons olive oil

1 large onion, chopped

+salt

+pepper

3 cloves garlic, minced

1 teaspoon turmeric

1 teaspoon cumin

1 cup kale, chopped (optional)

2 cups dried split peas

water, enough to cover the split peas and 2 inches more.

2 tablespoons vegetable base

Directions:

Heat a cast iron soup pot on the stove to medium. Add olive oil, onion, salt and pepper, sauté until translucent. Add garlic, turmeric, cumin and kale, sauté for a couple of minutes. Add the split pea and water and bring to a boil. Next, turn the heat to simmer, add vegetable base and cook for at least an hour until the split peas become completely soft. You can leave it as is or you can grind the soup into a smooth texture just like I did. (with an immersion blender)

Serve warm with a piece of toast.
