Miso Tofu Balls In Lemony Fennel & Greens

Dinner in one bowl is always a good choice! This dish has a fresh lemony flavor and great texture combination. I love the smoothness of the tofu balls with the bite of the vegetables. It is super satisfying.

Perfect if you do weekly meal prep as it can easily be warmed up in the microwave.

Ingredients

1 block of tofu, 14 oz / 397 g

1 yam, cooked, peeled and drained

4 spring onions, chopped

1 garlic clove

1 inch fresh ginger, peeled and grated

1 inch fresh turmeric root, peeled and grated

4 tablespoons olive oil

+salt

+pepper

4 beet greens, chopped

3 tablespoons white miso paste

1/4 cup red lentil flour (you can always make your own flour by adding red lentils into a strong blender such as vitamix)

1 lemon, juiced

Fennel And Greens Ingredients

2 tablespoons olive oil

1 fennel, chopped

3 spring onions, chopped

4 celery stalks, chopped

1 clove of garlic, minced

+salt

+pepper

1 jalapeno, chopped (optional)

1 tablespoon garlic powder

2-3 cups of water

2 cups peas, fresh or frozen

4 tablespoons white miso paste

1 lemon, juiced

1 tablespoon monk-fruit or any other sweetener

Heat oven to 375 F.

Line a baking sheet with parchment paper.

To a food processor add: tofu, yam, green onions, garlic, ginger, turmeric, olive oil, salt and pepper. Process until smooth. Next add the chopped beet greens to a large mixing bowl, add the tofu mixture, white miso paste, red lentil flour and lemon juice. Mix with your hands until well distributed.

Take an ice cream scoop and scoop an evenly sized balls and place on the baking sheet. Drizzle with olive oil and bake in the oven for about 20 minutes, until golden brown.

Fennel And Greens Directions

Heat olive oil in the pan. Add fennel, spring onions, celery stalks, garlic, salt and pepper. Sauté for a few minutes, then add jalapeno, garlic powder and water. bring to a boil and add peas, miso paste, lemon juice and monk-fruit. Bring to a boil then lower to simmer until all the vegetables are tender.

Assemble

Add the balls into the pan gently, shake the pan slightly to mix and serve.
