Peanut Butter Banana Bread

Heaven in your mouth! Rich to perfection!

It is slightly sweet, airy and so satisfying.The texture is absolutely divine!

Ingredients

3 ripe bananas

3/4 cup peanut butter

1/4 cup dairy free milk

1 teaspoon apple cider vinegar

1/2 cup olive oil

1 teaspoon vanilla extract

3/4 cup pure maple syrup

1/4 cup cocoa powder

2 cups gluten free flour blend, I used one to one, bob’s Red Mill

1/2 cup almond flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

Directions

Heat oven to 375 F. Your (convection setting)

In a food processor or in a mixing bowl add bananas, peanut butter, dairy free milk, apple cider vinegar, olive oil, vanilla extract, pure maple syrup and cocoa powder. Blend until super smooth and frothy.

In another mixing bowl add gluten free flour blend, almond flour, baking powder, baking soda and salt. Whisk well. Pour the wet ingredients into the dry ingredients and mix with a spatula until combined.

Pour the batter into a baking dish and bake for about 50-60 minutes.

Let it cool down completely before serving.

You can also bake the batter in a muffin pan and it will shorten the baking time to about 20-25 minutes.
