Tempeh Fajitas

Tempeh Fajitas are simply the best! Just a few ingredients go a long way in this recipe. Straight forward, no specific skills needed to create an out-of-this-world meal. (This dish is also great if you meal prep).

Ingredients:

2 tablespoons olive oil

1 large onion, sliced

3 cloves of garlic, sliced or minced

1 red bell pepper, sliced into stripes

1 block of tempeh, 8 oz / 227 g, cubed

1 tablespoons shawarma spice mix

salt

pepper

Directions:

Heat a nonstick pan to medium-high and add olive oil and onion, salt + pepper, and sauté for a few minutes. Next, add garlic and red bell pepper, sauté for a few more minutes and then add the tempeh and shawarma spice mix. Keep mixing and sautéing until all the flavors combine. You may need to add a splash of water if it starts sticking to the bottom of the pan.

Corn, black beans, quinoa, roasted brussels sprouts, tempeh fajita, and Chipotle style dressing on top.
