Parsley Tabbouleh

Spring is here and I feel that eating light meals is what I crave right now.

Salads are my go to, and this tabbouleh salad is super refreshing, full of goodness and superfood ingredients. It is also rich in iron, minerals, vitamin C and protein.

It goes perfectly with my Green Tahini Sauce.

Ingredients:

2-3 bunches of parsley, washed, remove the stems, chopped

4 celery stalks, chopped

1/4 cup sunflower seeds

1/4 cup pumpkin seeds

1/4 cup goji berry

1 tablespoon hemp seeds

Optional to add: 1 cup cooked quinoa / bulgur or 1 cup fresh cauliflower rice

Dressing:

2 tablespoons olive oil

1 lemon, juice and zest

+salt

+pepper

Directions:

Mix all the salad ingredients in a bowl. Mix all the dressing ingredients In another bowl. Pour the dressing over the salad, mix and serve.
