Sweet Granola For Passover

Passover is coming up and with it my new granola recipe. The perfect crunch, the most balanced flavors, and the ultimate snack. On top of your ice cream, yogurt or even with your favorite glass of milk. Enjoy it for as long as it will last on your counter, or, just make a double batch from the beginning😉.

Ingredients

3 matzo’s, break into small pieces

1/2 cup raw almonds

1/2 cup raw pecans

1/2 cup shredded coconut

1/4 cup olive oil

1/4 cup pure maple syrup

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/4 teaspoon cardamom (optional)

Directions

Heat oven to 350 F, convection setting preferred

Take a large baking sheet and line with a parchment paper, set aside.

Take a mixing bowl and add the matzo’s, almonds, pecans and coconut. In another smaller bowl add olive oil, pure maple syrup, salt, cinnamon and cardamom. whisk to combine and then pour over the dry ingredients. Mix well with a spatula for an evenly distribution of the wet ingredients. Pour the mixture into the baking sheet and flat it into a one layer. Bake in the oven for about 25 minutes or less. Make sure to mix it again after about ten minutes in the oven so that it will bake in the most evenly way possible.

Notes

*If you like granola, I suggest you to double the quantities…It is that good and crunchy!

*You can add any nuts or seeds that you like, be creative, you can’t go wrong
