Refried Beans

Refried beans are not something I grew up on, but it is a dish my kids requested because they LOVE Mexican food.

The outcome is super comforting, very flavorful, and packed with protein and fiber. I personally love beans in every shape or form…

Serve with some rice, guacamole, and Israeli Salad.

Ingredients:

3-4 cups cooked black beans (also keep 1 cup of the cooking water)

1 medium onion, thinly sliced

4 cloves of garlic, minced

1 tablespoon olive oil

1 teaspoon cumin

1/2 teaspoon chili powder

+Salt

+Pepper


Directions:

Heat a nonstick pan to medium heat and add olive oil, onions, and salt. Sauté for a couple of minutes until the onions get translucent, and then add garlic, cumin, and chili powder. Sauté for a few more minutes. Add the cooked beans and about a cup of the cooking water. Lower the heat to low and start mashing the beans with a potato masher. It’s ok to have some bits, it doesn’t have to be completely smooth—completely up to you.

Drizzle with some olive oil and serve.
