Red Lentil Laksa

Red Lentil Laksa is ridiculously easy to prepare if you have the Laksa paste ready.

I always prepare a large batch of the laksa paste and freeze in small mason jars. It helps me prepare quick healthy meals in no time.

Red lentils are a good source of fiber as well as high in protein.

Red lentils tend to “melt” into the sauce and the texture becomes super creamy and so comforting!

Laksa goes very well with red lentils. It creates a complex flavor from a simple ingredient.

Ingredients

Yields: 6 servings

2 tablespoons olive oil

1/3 cup laksa paste

3 tablespoons organic ketchup

1 can coconut milk 13.5 oz / 400 ml

2 1/4 cups coconut water

2 cups chopped celery stalks

4 cups fresh spinach

1 1/2 cups red lentils

+salt

+pepper

Directions

In a cast iron pot add olive oil and the laksa paste. Sauté for a couple of minutes and then add ketchup, celery stalks, coconut milk and coconut water. Bring to a boil and then lower to simmer. Add spinach, red lentils, salt & pepper. Let it cook on low heat for at least an hour. Add more water if needed. Mix from time to time to make sure it doesn’t stick to the bottom of the pot. Serve over rice or as is.
