Baked Cabbage

Baked Cabbage is one of the dishes I make on repeat. There are not enough words to describe this fantastic, impressive and delicious dish. Baked Cabbage is just so so good and ridiculously easy to prepare.

Literally 5 minutes or less to assemble (after all the veggies are washed and cut) and you are done. All you need to do is wait 5-6 hours for it to slow cook.

It is our latest favorite dish in the house. It is rich in flavor, low in calories and perfect for any occasion.

Ingredients

2 tablespoons olive oil (and more for later)

1 large onion, sliced into chunks

2 large tomatoes, cubed

1 bell pepper, cubed

1 head of garlic, peeled and cut into chunks

1 tablespoon cajun spice mix

1 tablespoon turmeric

1 tablespoon paprika

1 green cabbage, cut into 6 large pieces

1 long carrot, peeled and sliced into 1 inch pieces

+salt

+pepper

optional: fresh herbs such as rosemary, oregano or dill

Directions

Heat oven to 375 F

To a cast iron pot add olive oil, onion, tomatoes, bell pepper and garlic. Drizzle some olive oil on top (about 2 tablespoon or less) sprinkle with salt, pepper, cajun, turmeric and paprika. Next, add the cabbage on top, add carrots and fresh herbs, if using. Drizzle some more olive oil on top, add salt & pepper. Put the lid on and bake in the oven for an hour, then lower the heat to 290 F and bake for at least 5 hours or until it looks like the photos below.
