Green Lentil Stew

Lentil Stew is the best comfort food. It is loaded with protein, fiber and flavors.

The perfect combination of sweet and salty. This dish is the ultimate one to prepare ahead of time and will last a few days in the fridge easily.

Ingredients

2 tablespoons olive oil

1 onion, chopped

4 cloves of garlic, minced

5 celery stalks, chopped

1 parsnip, peeled and chopped

1 large yam, peeled and chopped

2 cups of green lentils, soaked overnight and drained

2 tablespoons sweet paprika

1 tablespoon turmeric

1 tablespoon cumin powder

1 teaspoon old bay seasoning

2 bay leaves

+salt

+pepper

Directions

Heat stove to a medium -high. To a cast iron pot add olive oil and onions, salt and pepper. Sauté for a couple of minutes and then add garlic and celery, sauté for a couple minutes then add parsnip and yam. Sauté for a couple more minutes then add all the spices except bay leaves. Sauté for a minutes and add the lentils and water to cover the stew and a bit more. Bring to a boil, add bay leaves and more salt and pepper. lower the heat and cook until tender. You may need to add more water if the water have been evaporated.

Serve over rice or with your favorite toasted bread.
