Dinner Rolls

Instead of empty calories in a traditional dinner rolls, here is a recipe that I developed that combines delicious flavors, yet packed with protein and fiber.

Super easy to prepare and completely guilt-free!

Ingredients

1 package tofu, drained 16 oz / 454 g

3 large olives, pitted, any kind you like

2 tablespoons nutritional yeast

2 tablespoons olive oil 

Salt to taste

1 cup red lentils flour

1 teaspoon baking powder

2 tablespoons psyllium husk powder 

3 tablespoons hemp seeds


Directions

Heat oven to 375 F , convection setting

To a food processor add: tofu, olives, nutritional yeast, olive oil and salt. Blend until smooth.

In a large mixing bowl add: lentil flour, baking powder, psyllium husk, hemp seeds. Mix with a whisk thoroughly.

Pour the tofu mixture into the flour mixture and mix with a whisk.

Take a baking sheet and line with a parchment paper.

Take a large ice cream scoop and create an evenly sized rolls. Wet your hands to smooth them in between your hands. Sprinkle with black sesame or your favorite toppings. Bake in the oven for about 35 minutes.

Let it cool down completely before serving.

Keep in the fridge in a ziplock bag. When ready to eat, slice in half and toast in the toaster.

I love eating these with cashew cheese, avocado and some sauerkraut.
