Chocolate Roulade

Not too sweet, not too crunchy, but definitely a treat that you are going to love! I developed this recipe based on my gluten-free bread recipe, so this dough is similar to a chocolate-filled cake, rather than a hard cookie. It’s amazing!

For best results, warm up a piece in the microwave for 15 seconds—it will taste divine! It is the perfect sweet treat to go with your coffee or tea.

Ingredients:
3 cups gluten-free oat flour

1/2 cup psyllium husk

1/3 cup flaxseed meal

1 tablespoon baking powder

1/2 teaspoon baking soda

pinch of salt

2 cups water

2 tablespoons olive oil

2 teaspoons apple cider vinegar

1/2 cup pure maple syrup

1 teaspoon vanilla extract

Filling: Homemade Nutella

Directions:

Heat oven to 375F.

Take a large mixing bowl and add oat flour, psyllium husk, flaxseed meal, baking powder, baking soda, and salt. Mix with a whisk to combine. In another bowl add water, olive oil, apple cider vinegar, pure maple syrup, and vanilla extract, mix well with a whisk. Pour the wet ingredients into the dry ingredients and mix well with your hands. Let the dough sit for about 15 minutes form a firm dough. After letting the dough sit, divide it into 2 pieces. Take some parchment paper and lay one piece of the dough on it. Take another piece of parchment paper and lay it on top of the dough. Take a rolling pin and roll the dough between the 2 pieces of parchment paper, until it is about 1/8” thick. You want it to be thin enough to be able to roll it up, but not too thin that it will fall apart. Remove the top piece of parchment paper. Take a spatula and start spreading a thin layer of the Homemade Nutella. Roll the dough with the chocolate the long way into a roulade and place it on a baking sheet lined with parchment paper. Take a knife and slice the dough into 3/4” pieces—you don’t need to separate the cookies, as it will bake as a roulade. Do the same with the second piece of dough. You will end up with two roulades. You can add chopped walnuts, cinnamon, and any other fillings that you would like.

Bake in the oven for about 30 minutes, until the roulade turns golden brown.

Let it cool down completely and with a knife, separate the pieces into cookies.

Sprinkle with powdered sugar and store in a jar on the counter or in the fridge.
