Chickpea Omelet is my go to when it comes to lunch. 

It's super easy to prepare, and I always have the ingredients in the house.

It is satisfying, loaded with protein and fiber. It keeps the blood sugar stable due to its complex carbs, (It breaks down slowly in your body)

I love to drizzle it with tahini sauce and serve it with vegetables or salad.

This omelet is best if you eat it right away.
