Quinoa Bake

Quinoa Bake is my latest favorite dish!! Not only it is so comforting, and literally melts in your mouth, but it is a dish that everyone love! even the picky ones. It is a great dish to feed a crowd, super easy to assemble, and it is very impressive too. The only time consuming here is to chop the veggies. I used in this recipe fresh spices such ginger and turmeric, which known to contain strong antioxidants and anti inflammatory properties, in addition, it can lower your risk to heart disease as well as lower your risk to cancer, and even treat cancer!

Curcumin is the main active ingredient in turmeric. studies shown that to enhance absorption of the turmeric you need to add pepper. 

Turmeric may also prevent Alzheimer, help with arthritis patients, and even help with depression.

So many good things in one ingredient of this fabulous comforting dish. 

This dish is full of vitamins, minerals and fiber, perfect for any day of the week.

Quinoa Bake

Ingredients:

1 shallot, chopped

5 spring onions, chopped

1 long carrot, chopped

2 cups fresh broccoli, chopped

1 yam / sweet potato, chopped

4 shishito peppers, chopped

1/2 cup dried peas

1 tablespoon fresh turmeric root, grated

1 tablespoon fresh ginger root, grated

7 celery stalks, chopped

1 tablespoon cumin

1 tablespoon sweet paprika

1 cup tricolor quinoa

1/4 cup olive oil

2 1/2 cups water

salt

pepper

 

 

 

 

Directions:

Heat oven to 375 F

Take a mixing bowl and add all the ingredients except the water. Mix with your hands thoroughly and pour the mixture into a baking dish. add the water. Bake for about an hour, until all the water have been evaporated and the vegetables are tender. serve into individual bowls, drizzle with tahini sauce and enjoy.
