Tomatoes & Peppers Cilantro & Parsley

It's never too boring to eat a tomato salad especially when you know that it's loaded with so many vitamins and nutrients. Vitamin C, antioxidants, iron and so much more. But even if you ignore all of that, you can't get away from the amazing flavor and freshness of this salad. Heirloom tomatoes are great to use here. It notches it up a tone! Good balsamic and quality olive oil are key. Just a few ingredients go a long way. Less is definitely more in this salad. Enjoy.



3 cups cherry heirloom tomatoes, cut in half

1 cup yellow and red peppers, cubed

1/2 cup cilantro, chopped

1/2 cup Parsley, chopped


1 tablespoon olive oil

1 teaspoon balsamic vinaigrette 

Juice of 1/2 lemon
