Okra / Tomato Sauce / Garlic

"Okra in its best" that what my son Roy would say on this recipe. He is the biggest fan of this dish! He can eat the whole recipe himself :) I feel very fortunate that my children appreciate good healthy food! Okra is known for its amazing nutritious benefits, as well as the garlic and tomato sauce. O

kra even falls into the super food category which is awesome! Okra has very few calories, low in fat, rich source of minerals, fibers and vitamins. It is also known for its high amount of antioxidants.

Eating healthy doesn't mean eating food that isn't tasty, healthy food is definitely tasty if you make it right!

Try this super easy recipe and let me know what you think. I am curious to know if you or your kids think the same as my son!

 

Ingredients:

1 teaspoon olive oil 

1 clove garlic, minced

1 package of frozen and thawed okra 16 oz / 454 gr

1 can tomato sauce 15 oz / 425 gr

1 1/2 teaspoon agave

Salt

Pepper

 

Directions:

Take a nonstick pan and add olive oil and garlic. Sauté for about a minute, you don't want the garlic to burn because then it gets bitter.  Sauté just until you start smelling the aroma of garlic, then add the tomato sauce, salt pepper and agave. Let it cook for 2 minutes on medium, add the okra. Lower the heat and let simmer for about 20-30 minutes, until it's soft but not mushy.
