Potato Latkes

Chanukkah is the best time to make these yummy potato latkes!

So glad it's today!

These are almost guilt free since they are baked, instead of fried😀

Just a few ingredients create an amazing flavor! 

So easy to make, everyone can do it! 

I shaped mine with menorah, dreidel and star of david cookie cutters but you can certainly make your own shape!

 

Ingredients:

5 large potatoes, peeled and grated (best and fast in the food processor)

1 onion, grated

2 tablespoons olive oil

Salt

Pepper

Olive oil spray

 

Directions:

Heat oven to 350F

Drain the potatoes on a strainer to get rid of all the access liquids. When dry, pour into a mixing bowl, add the onions, olive oil, salt and pepper.

Take a cookie cutter of your liking, and take a spoonful of the batter, press tightly into the shape. Pull the cookie cutter off gently. 

When you are done, spray the top with olive oil spray and bake for about 20-25 minutes, until golden brown.

Serve warm with Apple sauce.
