Vegan Red lentils stuffed peppers

Another great recipe for vegan stuffed peppers.

It is so nutritious yet easy to make and super satisfying.

This dish is light and delicious!

Ingredients:

6 colorful peppers (red, yellow, orange)

1 cup dried red lentils soaked in 1.5 cups water for about 3 hours

9 celery stalks - chopped

1 medium onion - chopped

1 tablespoon olive oil

2 cloves of garlic- crushed

1 teaspoon onion powder

1 teaspoon turmeric powder

1 can of tomato sauce 15 oz or 425 gr (half will use in the mixture and half in the sauce)

For the sauce:

1/2 of the tomato sauce 

1.5 cup water

1 teaspoon agave

Salt

Pepper

 

Directions:

In a non stick pan add olive oil, onions, then the garlic and last the celery. Let it cook until tender and fragrant.

Add the onion powder the turmeric

Finally add the tomato sauce- (1/2 of the can)

And the lentils with the liquids, cook for about 5 minutes.

Set aside.

Prepare the peppers:

Cut the top part of the pepper.

Empty the seeds.

Start filling the peppers with the mixture,  Lay peppers lid back on top.

Take a large pot and try to fit the peppers tightly together.

Mix the sauce ingredients and pour into the pot.

Cook on medium heat until tender.

Make sure while the peppers cook to pour some sauce over the peppers and inside to keep them very moist.

Serve with your favorite bread
