Vegan Red Lentil Stuffed Peppers

Another great recipe for vegan stuffed peppers.

It is so nutritious yet easy to make and super satisfying.

This dish is light and delicious!

 

Ingredients:

6 colorful peppers (red, yellow, orange)

1 cup dried red lentils

9 celery stalks - chopped

1 medium onion - chopped

1 tablespoon olive oil

2 cloves of garlic, minced

1 teaspoon onion powder

1 teaspoon turmeric powder

1/2 can of tomato sauce 7 oz / 212.5 g

1 1/2 cups water

For the sauce:

1/2 of the tomato sauce  7 oz / 212.5 gr

1 1/2 cups water

1 tablespoon vegetable paste

1 teaspoon pure maple syrup

Salt

Pepper

 

Directions:

In a nonstick pan add olive oil, onion, salt & pepper, then add garlic and celery. Sauté until tender and fragrant.

Add the onion powder, turmeric, mix for a minute.

Add the tomato sauce- (1/2 of the can) the lentils and the water and cook on low heat until the water have soaked into the lentils. set aside

Prepare the peppers:

Cut the top part of the peppers and keep it to cover the peppers after you fill them. Scoop out the seeds.

Fill the peppers with the filling mixture and cover them with the top part of the pepper.

Take a wide pot and try to fit the peppers tightly.

Mix the sauce ingredients and pour over the peppers.

Cook on low heat for about 50-60 minutes.

Every 10-15 minutes, take a spoon and pour some sauce on the peppers, to keep them moist and flavorful.
