Banana Bread With Spelt Flour And Chocolate Chunks

This is a great banana bread!   A good alternative for breakfast / snack.

The fact that there is no pure sugar in this recipe, and the flours I used are spelt, and almond, make the bread super healthy and you can enjoy without a guilt!

The bread comes out very moist and decadent.



11/4 cups spelt flour

1/4 cup almond meal

1 teaspoon falxseed meal

1 teaspoon baking powder

1 teaspoon baking powder

1/2 teaspoon cinnamon 

1/4 teaspoon salt

1/4 cup almond milk

3 mashed bananas

1/4 cup maple syrup

1/4 cup coconut oil

1/2 cup chocolate chunks



Heat oven to 350F.

Spray oil on a bread pan.

Mix all the dry ingredients in a bowl except the chocolate chips.

Mix all the wet ingredients in another bowl.

Pour the dry ingredients slowly into the wet ingredients.

and mix until combine.Add the chocolate chips. Do not over mix.

Bake for about 40-50 minutes, until golden brown and completely set.

Insert a toothpick and check if it comes out clean and dry, it's ready.

Cool on a cooling rack for about 20 minutes.
