Red Quinoa & Green Lentils Burgers

I am so excited to share these recipes !  I am in love with red quinoa, the flavor is so crunchy and earthy. I made red quinoa two-ways today.... One is the hamburger and second is my favorite red quinoa and baby kale salad.

First thing I do is soak the lentils in water over night, they start to sprout. In the morning I cook them in salty water, (the same way I'll cook pasta) and  than let them cool for later use.

The hamburger recipe is vegan, if you are a vegetarian, you can always subtitute the vegan cheese with regular cheddar cheese, or I would probably use Fontina.

I drizzled Dijon vinaigrette on top, which is the same dressing I made for the quinoa salad.

Ingredients (about 14 burgers):

2 cups cooked red quinoa ( follow recipe on box)

(Most times it's 2 parts water on 1 part quinoa- add some salt to water)

1 cup soaked all night green lentils

1 cup diced celery

1cup diced carrots

1 cup diced red bell pepper

1 cup shredded turnip rabiole

1 cup diced onion

1 cup Daiya vegan cheddar cheese style

1 tablespoon cumin powder

1 teaspoon turmeric

1 teaspoon garlic paste

1 tablespoon basil paste

1 tablespoon Dijon mustard

1 tablespoon pesto- (home made or store bought)

2 tablespoon flax meal mix with 6 tablespoon water-( let it stand for 10 minutes until it become jelly texture)

1 teaspoon no chicken base





Heat oven to 375F

In a mixing bowl add all ingredients.

Mix well and spray a baking sheet with olive oil,

Than form even size patties using ice cream scooper.

Spray the top with olive oil and cook for about an 30-40 minutes, until golden brown.

Serve on a bun, with avocado and tomato.
