Red Quinoa & Green Lentil Burgers

Red quinoa is my favorite kind of quinoa. It has a great texture and keeps its shape better than the white.

These burgers are extremely nutritious, contain the essential 9 amino acids so they are a complete protein and they taste amazing!

For the burgers, the first thing I do is soak the lentils in water overnight, they will start to sprout. In the morning I cook them in water according to the package instructions.

(You can skip the soaking if you are in a rush and cook them without soaking.)

Ingredients (about 14 burgers):

2 cups cooked red quinoa ( follow instructions on the box)

(I do 2 parts water and 1 part quinoa- add 1 teaspoon salt to the water)

1 cup green lentils, soaked overnight, and cooked

1 cup celery, chopped

1 cup carrots, chopped 

1 cup red bell pepper, chopped

1 cup turnip, grated

1 cup onion, chopped

1 cup vegan cheddar cheese style, optional

1 clove garlic, minced

1 tablespoon cumin 

1 teaspoon turmeric

1 tablespoon basil, chopped

1 tablespoon Dijon mustard

1 tablespoon pesto- (homemade or store-bought)

2 flax eggs -  (2 tablespoons flax meal mixed with 6 tablespoons water-let it sit for 10 minutes until it becomes like jelly texture)

1 teaspoon vegetable base

+Salt

+Pepper

 

Directions:

Heat oven to 375 F

In a mixing bowl add all the ingredients.

Mix well

Line a baking sheet with parchment paper.

Next, form an evenly sized patties using an ice cream scoop and place on the baking sheet.

Spray the top with olive oil and bake for about 30-40 minutes, until golden brown.

Serve on a bun, with avocado and tomato.
