Red Quinoa & Green Lentils Burgers

I am so excited to share these recipes !  I am in love with red quinoa, the flavor is so crunchy and earthy. I made red quinoa two-ways today.... One is the hamburger and second is my favorite red quinoa and baby kale salad.

First thing I do is I soak the lentils in water overnight, they start to sprout. In the morning I cook them in salty water, (the same way I'll cook pasta) and  then I'll drain them and let it cool.

I drizzled Dijon vinaigrette on top, which is the same dressing I made for the quinoa salad.

 

Ingredients (about 14 burgers):

2 cups cooked red quinoa ( follow recipe on box)

(Most times it's 2 parts water on 1 part quinoa- add 1 teaspoon salt to the water)

1 cup green lentils, soaked overnight

1 cup celery, chopped

1 cup carrots, chopped 

1 cu red bell pepper, chopped

1 cup turnip, grated

1 cup onion, chopped

1 cup vegan cheddar cheese style

1 tablespoon cumin 

1 teaspoon turmeric

1 clove garlic, minced

1 tablespoon basil, chopped

1 tablespoon Dijon mustard

1 tablespoon pesto- (home made or store bought)

2 flax eggs -  (2 tablespoons flax meal mixed with 6 tablespoons water-let it sit for 10 minutes until it become like jelly texture)

1 teaspoon no chicken base

Salt

Pepper

 

Directions:

Heat oven to 375 F

In a mixing bowl add all the ingredients.

Mix well.

Spray a baking sheet with olive oil.

Next, form an evenly sized patties using an ice cream scoop.

Spray the top with olive oil and bake for about an 30-40 minutes, until golden brown.

Serve on a bun, with avocado and tomato.
