Raw Cauliflower Salad / Stuffed Tomatoes



For the salad:

1 head of cauliflower, grated in the food processor

1 cup carrots, grated

1 cup parsley and mint, chopped (about 1/2 cup each)

1/4 cup walnuts, chopped

About 8 medium tomatoes- use a spoon to scoop the flesh 

For the dressing:

1 tablespoon olive oil

Juice and zest of one lemon

Juice and zest of one orange

1 tablespoon agave 






Mix all the salad ingredients in a bowl.

Mix all the dressing ingredients in another bowl.

Pour the dressing over the cauliflower salad. Mix well and stuff the tomatoes.

You can keep the tomatoes flesh and use it later for cooking a sauce - you can also freeze it in a ziplock
