Zaatar-Spiced Eggplant Fries

You probably know by now how much I love eggplant in any shape or form…

I created these fries recently and combined two of my favorites: eggplant and zaatar spice mix which is a Mediterranean spice mix that usually contains: thyme, oregano, toasted sesame seeds, and sumac.

It turned out AMAZING! I decided to call it fries but between you and me…they’re not really fries… except for the shape 😂

The texture is somewhat crunchy on the outside and super soft on the inside. True perfection!

Great as a snack or a side dish. The best thing about these is that they are made out of only 3 ingredients!

Ingredients

2 eggplants, cut lengthwise and into 4” strips

1/4 cup olive oil (approximately)

3 tablespoons zaatar spice mix

+salt

+pepper

Directions

Heat oven to 375 F

Take a baking sheet and line with parchment paper.

Take a large mixing bowl and add the eggplant strips, drizzle with olive oil and mix well with your hand to massage it into the eggplants. Then sprinkle the zaatar, salt & pepper and mix again with your hands to coat everything evenly. Next, pour the eggplant strips onto the baking sheet and arrange it in one layer.

Bake in the oven for about 20 minutes, then turn the fries to the other side and bake until golden brown and tender.

Serve warm with your favorite dipping sauce.
