White Chocolate Lemon Mousse

White Chocolate was and is my all-time favorite ever since I can remember … I always preferred the “white” stuff like vanilla ice cream, white chocolate, white pound cake, etc. (My mom, on the other hand, preferred everything chocolate—dark chocolate, chocolate mousse, chocolate cake, etc.)

Does that mean I’m a vanilla kind of person? LOL

Another ingredient I’m obsessed with is citrus, specifically lemon and lime. Combining those with white chocolate is heaven for me! I have a feeling you are going to like it too.

Ingredients:

1 package of firm tofu (16 oz / 453 g)

1 teaspoon vanilla extract

2 medium-large lemons, juiced, and the zest of 1 lemon

1 medium lime, zest and juice

1/2 cup pure maple syrup

1/4 cup cacao butter, melted in the microwave

1 teaspoon apple cider vinegar

pinch of salt

Topping:

lemon & lime zest

Directions:

In a strong blender (such as Vitamix) add all the ingredients and process until super smooth and creamy.

Pour into individual ramekins and store in the fridge for up to 5 days. I used small mason jars with lids.

Sprinkle with lemon and lime zest before serving.
