The Healthiest Bread / Seeded Oat Bread

Gluten-free, easy to prepare and so good! Especially if you are not an oatmeal kind of person but want to benefit from it…Have a piece of bread with avocado and some veggies instead. The most balanced delicious breakfast. Great for digestive and your daily fiber intake.

Ingredients

2 1/4 cups gluten-free rolled oats

3/4 cup flaxseed meal

3/4 cup hemp-seeds

1/3 cup psyllium husk

1/4 cup chia seeds

1 cup sunflower seeds

3/4 cup pumpkin seeds

1 tablespoon salt (or less)

1 1/2 cups water

2 tablespoons pure maple syrup

1/4 cup olive oil

For the baking pan: avocado spray oil

Directions

Prepare a baking dish for your bread and grease with avocado oil spray. I used a loaf pan 9” X 5/1/2”.

Into a mixing bowl add rolled oats, flaxseed meal, hemp-seeds, psyllium husk, chia seeds, sunflower seeds, pumpkin seeds and salt. Mix with a spatula. Next add: water, pure maple syrup and olive oil. Mix well.

Pour the batter into the baking dish and press with your hands or use a spatula. Cover with a plastic wrap and place in the fridge for couple hours or preferably overnight.

Next, heat oven to 375 F, convection setting. Bake in the oven for about 1 hour and 20 minutes.

Let it cool down completely, then slice and store in a ziplock bag in the freezer. Toast a piece when you are ready to eat. For best results place in the oven on a baking sheet, so that the slices gets evenly toasted and crunchy on both sides.
