Spicy Carrot Salad

This is our latest obsession salad in the house! It combines crunch, spice, and amazing flavor that you can’t get enough of…Luckily it’s low in calories and absolutely guilt-free, so not too bad:)

What I like to do is make a large batch of this salad and store it in the fridge in small containers, so that when one of the house members open the fridge, they can grab something healthy to eat, even as a snack.

It will last a good 5 days in the fridge.

I like to drizzle mine with tahini sauce because it adds so much creaminess.

Never underestimate a 2 ingredients salad:) Enjoy!

Ingredients:

5 large carrots, shredded (I did it in the food processor)

2 jalapeño peppers, chopped (with the seeds if you like it spicy and without the seeds for less spicy)

1 clove of garlic, minced

1 orange, juiced

1 large lemon, juiced

+salt

+pepper

Directions:

In a large mixing bowl add the carrots and jalapeños.

In another bowl mix together all the dressing ingredients: Garlic, orange juice, lemon juice, salt & pepper.

Pour the dressing over the salad. Mix and serve.

Keep in the fridge in an airtight container.
