Peanut Butter Oatmeal Cookies

Loaded with protein and flavor. Amazing texture, gluten free too.

We are seriously addicted to them! One bowl, 5 minutes to prepare and about 10 minutes in the oven! so easy and quick!

Feel free to add chocolate chips or any other nuts that you like.

Ingredients:

1 cup peanut butter, your favorite kind

1 cup pure maple syrup

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/4 cup walnuts, chopped

3 cups gluten-free oats

Directions:

Heat oven to 375 F.

Take a large bowl and add peanut butter, maple syrup, vanilla extract and cinnamon,mix with a whisk until you reach a smooth consistency. Next, add walnuts and oats. Mix with a spatula.

Take a baking sheet and line with a parchment paper.

Take a small ice cream scoop and dip it in water, then scoop a ball from the batter and lay on the baking sheet. Press slightly with you hand to flattened the ball. Keep dipping the ice cream scoop in water before scooping the balls. When done with the balls, bake in the oven for about 10 minutes in the middle rack.

Let it cool completely before serving. Store in a jar on the counter top.
