Simple GF Pancakes

This pancake recipe is perfect for just that—a healthy and vegan+GF breakfast. It has the best texture and flavor—not too sweet yet so fluffy! My family loves it. They can’t get enough. I usually serve it with blueberries, strawberries, bananas, and pure maple syrup.

Ingredients:

1 1/4 cup gluten-free oat flour

1 tablespoon baking powder

2 tablespoons flaxseed meal

pinch of salt

2 tablespoons pure maple syrup

1 cup almond milk or oat milk or your favorite alternative milk

1/3 cup water

2 tablespoons olive oil

1 teaspoon vanilla extract

Directions:

In a mixing bowl add all the dry ingredients: oat flour, baking powder, flaxseed meal, and salt, mix.

In another bowl add the wet ingredients: pure maple syrup, almond milk, water, olive oil, and vanilla extract, whisk to combine.

Pour the wet ingredients into the dry ingredients and whisk constantly until you get a smooth texture.

Let it sit for 5 minutes. In the meantime turn the stove heat to medium. Take a nonstick pan and a small ladle (about 1/4 cup) to create an evenly sized mini pancakes.

Cook the pancake for 2-3 minutes until the edges start to loosen up and it’s easy to flip. Flip to the other side and cook for a couple more minutes, or until golden brown.

Serve with fresh blueberries, strawberries, and bananas.
