Mediterranean Zesty Bean Salad

Ingredients

1 cup of cooked cannellini beans, (you can use beans from a can, just make sure to wash and strain them before beforehand)

1 red bell pepper, cubed

4 celery stalks, chopped

5-6 cherry tomatoes, sliced in half or any tomato sliced into large cubes

2 strands of fresh dill, chopped

Dressing

1 lemon, juice + zest

1 clove of garlic, minced

2 tablespoons extra virgin olive oil

+salt

+pepper

Directions

Take a mixing bowl and add all the salad ingredients. Take another small mixing bowl and add all the dressing ingredients. Whisk well and pour over the salad. Mix the salad and pour over a serving plate.

Optional serving idea

Serve the salad over Tahini, it will add an extra layer of flavor.
