Macadamia Nut Cookies

Every time I am expecting guests in the house, I make sure to have a good selection of cookies in a jar on the countertop. It's one of those things that makes a house, a home, in my opinion.
So what better than good healthy cookies that your family and guests are going to greatly appreciate?

Today I am sharing a recipe that is my latest hit. Sweet and salty perfection. Macadamia Nut Cookies.

Once you make them you are going to be hooked. These cookies are gluten free as well which is a big bonus.

As always, the easiest recipe!

Ingredients

yield about 40 mini cookies

1 cup almond flour

1 cup macadamia nut butter

1 flax egg (1 tablespoon flaxseed meal mixed with 3 tablespoons of water. let sit for 5-10 minutes)

1/2 cup pure maple syrup

1/2 teaspoon pure vanilla extract

1/4 teaspoon salt

Directions

Heat oven to 375 F. convection setting or 350 F. regular setting

Mix all the ingredients in a bowl using a whisk.

Prepare a baking sheet lined with a parchment paper.

Take the smallest ice cream scoop that you have. Scoop the cookies and place on the baking sheet, leave room between each cookie because they will spread.

Bake in the oven for about 10 - 12 minutes until the edges become golden brown.

Let the cookies cool down completely and set.

You can sprinkle some powdered sugar on top before serving.
