Gluten-Free Chanukah Cookies

Celebrating the miracle of lights is quite a big deal at our house! And Chanukah would not be complete without these addictive cookies! They are loaded with good ingredients such as almond meal, maple syrup, coconut oil, and oats. The cookies become perfectly crunchy and delicious.

You can shape these cookies with your favorite cookie cutters, or simply keep them round. Completely up to you!

Another good thing about these cookies is that they are gluten-free too, which makes them a lot easier to digest.

Oh, and you don't need to wait for Chanukah to make them! You can enjoy them year-round:)

Ingredients

Yield: 20 cookies

1/4 cup coconut oil

1/4 cup pure maple syrup

1 teaspoon vanilla extract

1  1/2 cups almond meal

3/4 cup gluten-free oat flour

1/4 cup arrowroot

Pinch of salt

Directions

Heat oven to 375F

Take a baking sheet and line with parchment paper.

Take a glass mixing bowl, add coconut oil, and heat in the microwave for 30 seconds to melt it. Then add pure maple syrup, vanilla extract, and whisk together. To the same bowl, add almond meal, gluten-free oat flour, arrowroot, and salt. Mix well with your hands to create a dough.

Dust your workstation and rolling pin with flour. Roll the dough and cut out cookies with your favorite cookie cutter shapes. You can also roll the dough between 2 sheets of parchment paper for a less messy workspace, and then you don’t need to dust with flour. Place on the baking sheet and bake in the oven for about 10-15 minutes until the edges become golden brown. Let it cool on a cooling rack for best results. Store in a glass jar on the counter.
