Fruit Smoothie Cake

This cake is one of those flavorful coffee cakes that, visually, looks so simple, but it's actually very complex and full of healthy ingredients! Basically, you are in charge of the flavors; whatever you like in your fruit smoothie  will be used as the "wet ingredients" in your cake. I happen to use the "red goodness shake" (the last recipe I posted) and it contains beets, carrots, ginger, apple and more! All you need is a whisk and a mixing bowl and you are done!



2 tablespoons coconut oil, melted

1 cup brown sugar or pure maple syrup

2 cups spelt flour or gluten free flour

1 1/2 teaspoons baking soda

1 teaspoon vanilla extract

2 cups fruit shake 

1 teaspoon cinnamon 

Oil spray



Heat oven to 350F.

Take a loaf pan and spray with oil.

In a mixing bowl add coconut oil, sugar, fruit smoothie  and vanilla extract - mix well. In another mixing bowl add the dry ingredients: flour, baking soda, cinnamon.

Pour the dry ingredients into the wet ingredients gradually--in small batches--and whisk it until it has reached a smooth texture. Pour into the greased loaf pan and bake for about 40-50 minutes, or check that a toothpick inserted to the center of the cake comes out clean.
