Tofu Feta Over Fresh Simple Salad

Tofu Feta is one of my go to salads of when I need something quick and fresh. I often make it when I am back from vacation and want to reset my body. It takes minutes to prepare (as long as the tofu is marinated), it is loaded with protein, fiber and vitamin C. It is super refreshing, naturally gluten free and tastes amazing.

I added my little Mediterranean twist using Za’atar spice-mix in the marinade.

Tofu Ingredients

1 package firm tofu, sliced into cubes 16 oz / 454 g

2 lemons, juiced

1 tablespoon Za’atar spice-mix

salt to taste

Salad ingredients (3-4 servings)

1 english cucumber, cubed

2 cups cherry tomatoes, sliced

8 celery stalks, sliced

2 yellow peppers, cubed

12 kalamata olives, sliced

Salad dressing

1 lemon, juiced

1 tablespoon olive oil

+salt

+pepper

Tofu Feta Directions

Add all the ingredients into a ziplock bag and let marinate for a couple hours or overnight.

Salad Directions

Add all the salad ingredients into a bowl. Pour the salad dressing on top and mix.

Top the salad with the Tofu Feta and serve.
