Chocolate Chip Button Cookies

These are the most guilt-free, delicious, soft, and sweet cookies! I loved making them and love having these ingredients handy in my pantry year-round. It makes the whole process easy and accessible.

I am one of those people who crave a sweet treat from time to time but not too sweet, and preferably gluten-free (that actually tastes good). It is important for me that my dessert doesn’t contain unhealthy oils, like those found in store-bought treats. This is why I never buy desserts and prefer to make them myself. That way I know what’s in it and I can control the amount of sweetness and the quality of ingredients in general. These button cookies are just perfect! Not too sweet yet sweet enough, and they have great texture, so they’re good as a snack or even a quick breakfast.

Ingredients

1/4 cup olive oil

1/4 cup pure maple syrup

1/4 cup peanut butter or almond butter

1/4 cup nut milk

Pinch of salt

1 cup almond flour

1 cup gluten-free oat flour

1 1/2 teaspoons baking powder

Hu gems chocolate chips or any other vegan chocolate chips

Directions

Heat oven to 375F

Prepare a baking sheet with parchment paper and set aside.

In a mixing bowl combine olive oil, maple syrup, peanut butter, milk, and salt (use a whisk).

In another mixing bowl, combine the almond flour, oat flour, and baking powder.

Add the dry ingredients into the wet ingredients and mix with a spatula until you form a sticky dough.

Let it sit for about 10 minutes. Take a small ice cream scoop and scoop out evenly sized cookies, placing them on the parchment paper. Take 1 chocolate chip and press it in the center of each cookie.

Bake in the oven for about 10-15 minutes until golden brown. Let it cool down and set. Store in a jar on the counter.
