Spring Asparagus Salad With Lemony Dressing

Ingredients

4 servings

4 cups fresh asparagus, chopped into 1” pieces

2 cups celery stalk, chopped

2 cup sugar snap peas

2 cups arugula

1 cup cannellini beans, cooked

2 cups of mini potatoes, cooked and sliced in half

Dressing ingredients

1 lemon zest

2 lemons, juiced

1/4 cup olive oil

2 tablespoons dijon mustard

2 tablespoons pure maple syrup

+salt

+pepper

whisk all the dressing ingredients in a bowl and set aside.

Directions

Bring a large pot of salted water to a boil. Add the asparagus and cook for 5 minutes, until tender-crisp. Drain thoroughly and chill the asparagus. Repeat with the sugar snap peas, cooking for about 3 minutes and then draining and chilling. Assemble the salad by arranging the vegetables decoratively in a wide serving bowl. Drizzle with dressing before serving and toss to combine.
