Sugar Snap Peas Salad

I love to create salads that are a whole balanced meal. This is a perfect example since it contains the protein (tofu, quinoa) in the salad. I also love to combine textures in a salad. Fresh sugar snap peas are super crunchy, tofu is soft, quinoa adds the "base" to the salad, which is the substational component that will keep you satisfied longer and candied walnuts will add a little sweetness and crunch.

2 cups of fresh sugar snap peas, chopped

1 cup quinoa, cooked

1 cup extra firm Tofu, cubed

1/4 cup candies walnuts, chopped


1 tablespoon olive oil

1 lemon, juice and zest

1 tablespoon Apple cider vinegar  

1 teaspoon maple syrup
