Black Lentils & Mushroom Salad

Black Lentils salad is a great addition to any meal, as a side dish, or as a main dish, cold or warm.

Black lentils are great source of fiber and protein.

They are known for their health benefits such as:

Lower Cholesterol.

Lower the risk for heart disease.

Great for digestive system since its packed with fiber.

Stabilized Blood Sugar.  

Help with weight loss since it is low in calories and contain zero fat. Lentils will keep you full longer, so you'll have less disire to munch between meals.

Not only it is so good for us, but it is super tasty, and satisfying. I love to use this salad as my main protein, and add a caesar salad:

salad on the side to create the perfect crunch.



Yield: 4-6 servings

1 cup black lentils

3 cups water



1 tablespoon olive oil

1 medium onion, chopped

2 cloves of garlic, minced



2 spring onions, thinly sliced


1 tablespoon olive oil





Take a medium sauce pot and add the black lentils, water, salt and pepper. Cook until tender, strain the excess water. Let it cool completely, pour to a mixing bowl.

Take a nonstick pan and add olive oil, onion, garlic, salt and pepper. Turn heat to medium and saute until golden brown for about 2-3 minutes. Add the mushrooms and keep mixing, saute until golden brown and all the liquids have evaporated. Pour mixture into the mixing bowl with the black lentils. Add the chopped onion springs. Pour the dressing over the mixture and mix. Pour the salad onto a serving dish, garnish with some more spring onion and serve.
