Passover Mini Rolls

Passover is just around the corner, and there is not a complete holiday without passover rolls. My Mom used to make them every holiday and hers where the traditional ones, oval shape and hollow inside. I remember the smell in the house was so incredible, sign of spring, happiness and family special time together. Passover is probably my favorite holiday, not only because its my birthday but also because of the traditional food that I grew up on. There is so much excitement before the holiday, people buy gifts to each other and the festivity is in the air.

I recreated passover rolls, my style, bite size, flavorful, crunchy in the outside and soft in the inside. Good! And the best part is that it takes 10 minutes to prepare...

Give it a try and see for yourself that you don't need eggs to make delicious passover rolls.

 

Ingredients: 

yield : 21 Mini Rolls

4 cups water

1/4 cup olive oil

2 teaspoons salt

1 teaspoon pure maple syrup

4 cups Matzo meal

3 flax eggs- (3 tablespoons flaxseed meal mixed with 9 tablespoons water, left sit for 10-15 minutes) 

 + Zaatar spice mix (optional)

+ olive oil spray

Directions: 

Heat oven to 375 F. 

Take a baking sheet and line with a parchment paper. Set aside.

Take a large saucepan and add water, oil, salt and pure maple syrup. Bring to a boil, then remove from heat. 

Add the Matzo meal one cup at a time, mix constantly until you form a dough. Let it cool down slightly.

Add the flax eggs, mix. 

Take a medium sized ice-cream scoop and create an evenly sized rolls. Place them on the parchment paper.

Spray the top with olive oil, sprinkle with Zaatar (optional) and bake in the oven for about 30 minutes.
