Spelt & Black Lentils Salad

Cooked spelt has a great crunchy texture, it has a bite and it feels very substantial. It is rich in protein, dietary fiber, B vitamins, manganese and phosphorus. 

Spelt is a grain and considered a type of wheat. Spelt contain gluten and has high amount of carbs, therefor is not suitable for people with gluten intolerance or wheat allergy.

Spelt considered  whole grains and it is always important to incorporate whole grains in your diet. 

combined with black lentils that are high in protein, and can help with weigh loss, stabilized blood sugar, great for your digestive system as well as for your heart.

All together with the walnuts, goji berries (that are considered superfood) corn & red pepper for color, make the perfect dish for vegans, that is super satisfying and delicious.

It will last in the fridge for at least 4- 5 days.



Spelt & Black Lentils Salad


1 cup dried spelt

2 cups water

1 cup dried black lentils

2 cups water

1/2 cup corn, frozen and thawed

1/4 cup goji berries

1 red bell pepper, thinly cubed

1/4 cup walnuts, chopped


1 lemon, juice

1 orange, juice

2 tablespoons olive oil







cook spelt in water until spelt is tender, you might have some excess water, so drain it.

cook lentils in water, drain if necessary

Take a mixing bowl and add the cooked spelt, cooked lentils, corn, goji berries, red bell pepper, walnuts. Mix. Take another bowl and mix all the dressing ingredients. Pour the dressing over the salad, mix and serve.

You can make the salad the day before, it will get even better the next day.
