Olive Oil Orange Cake

Did you know that you can use olive oil for desserts too? The flavor is superb! and dessert become more of a guilt free indulgent, well, almost. Still better for you than any other oil. Olive oil is rich in monounsaturated fats that help lower the risk of heart disease. It also known to benefit insulin levels and blood sugar and lower your risk to type 2 diabetes. Olive oil contains nutrients and vitamins and loaded with antioxidants. There is something about the combination of orange cake and olive oil that work beautifully and tastefully. The cake is so moist and rich at the same time. The citrus gives it a wonderful fresh aroma.

Ingredients: 

2 oranges, zest and juice

1 cup unsweetened almond coconut milk or any other alternative milk

1 teaspoon vanilla extract

1/2 cup pure maple syrup

1/3 cup olive oil

2 1/2 cups spelt flour or white flour

1 cup almond flour

1 teaspoon baking soda

 2 teaspoons baking powder

1/2 teaspoon salt

 +olive oil spray

Directions: 

Heat oven to 350 F. 

Take a round cake pan and spray with olive oil. 

Take a mixing bowl and add the zest and juice of 2 oranges, almond coconut milk , vanilla extract, pure maple syrup, olive oil. Mix until combine.

In another bowl add spelt flour, almond flour, baking soda, baking powder and salt. Mix to combine. 

Pour the dry ingredients into the wet ingredients and whisk until smooth. 

pour the batter into the baking dish and bake for about 40 minutes.

let it cool down completely before serving.
