Fresh Green Chickpeas Spread

Fresh green chickpeas for me are big deal! I could not believe that I found them in the freezer section at Costco the other day, and I never had fresh chickpeas before. Normally, I like to add them to salads, but as a hummus expert maker, I thought why not creating a spread out of it, and sure enough, I tried and it turned out amazing! Super simple to make, and great protein source. I actually made it as a new spread for my kids lunches :) you can top it with celery, lettuce, tomatoes avocado, and whatever vegetable that you prefer. It's good!!

Ingredients:

2 1/2 cups fresh green chickpeas, cooked, divided (you can find it in the frozen section)

1/3 cup tahini paste

1/3 cup greek peperoncini

2/3 cup water

1 tablespoon olive oil

Juice of 1/2 lemon

Salt

Pepper

 

Directions:

In the food processor add 2 cups of chickpeas (out of the 2 1/2), tahini, peperoncini, water, olive oil lemon, salt and pepper. Mix until smooth. Add the 1/2 cup chickpeas to the mixture and mix by hand. Spread on your favorite bread or cracker and slice some celery stalk, sprinkle with pink Himalayan salt and pepper, drizzle some olive oil and enjoy!
