Celery was never my first choice when it comes to vegetables, until not long ago, when my Mom was telling me about her new recipe of celery salad that she has learned from her daughter in law, that is amazing! I'm very open to try new things and I gave it a try, and offcourse made my own spin on this one too:) I couldn't believe how flavorful, fresh and so crunchy and yummy this salad is. Unbelievably easy and just 2 main ingredients!! Isn't that awesome?
And what even more fantastic is that when you think about the health benefits of celery you get to like it twice as much! Celery known for its anti-inflammatory benefit, low in calories and contain a great source of antioxidants. It's better to eat it as fresh as possible in order to keep the nutrients active. After a week in the fridge, it looses its benefits slightly. Give it a try and treat yourself and your family to a new and delicious salad. Enjoy!
10-12 celery stalk, thinly sliced
1/4 cup candied walnuts, chopped
1 tablespoon vegan mayo
1 tablespoon sweet chili sauce
Juice of 1/2 lemon
Mix all the dressing ingredients. Pour the dressing over the celery, mix well, add the walnuts on top and serve.
