Peanut Butter & Jelly Cookies (32 cookies)

These cookies are the ultimate example for a guilt free treat. They are loaded with protein, low in sugar, contain good fat, and most importantly are extremely delicious! They'll be gone quick, I can assure that:) I like to use a raspberry jam on mine, but you can add any kind you'd like on yours, works just fine.

 

Ingredients:

1 cup almond flour

1 cup peanut butter

1 flax egg, (1 tablespoon flaxseed meal mixed with 3 tablespoon of water)

1/2 cup brown sugar

1 tablespoon coconut oil

Jam, your favorite kind

 

Directions:

Heat oven to 375° F

Mix all the dough ingredients in the food processor.

Create a bite size balls, and lay on a baking sheet that is lined with a parchment paper. Create a dent with your thumb on each cookie, and fill with jam.

Cook for about 10-15 minutes.

Let it cool and serve.

You can store it in an air tight container in the fridge for a week or so.
