Zucchini Spread

Zucchini spread is one of my favorite snacks. It is low in calories, loaded with fiber, and can lower your blood sugar. It's also great for the digestive system. Read some more about the benefits of zucchini here:

This zucchini spread is decadent, smooth, nutty, and goes so well with my homemade gluten free crackers! It's is also good with fresh peppers, cucumbers, and celery sticks. 

 

Ingredients:

1 large onion chopped

2 cloves of minced garlic

5 organic zucchinis cut into cubes

1 teaspoon olive oil

1 tablespoon hemp seeds

1/2 cup walnuts

Salt

Pepper

 

Directions:

In a non-stick pan add olive oil, onion, salt, and pepper. Sauté for a few minutes, then add garlic and zucchini. Sauté until completely tender and the liquids have evaporated. In a food processor add the zucchini mixture, hemp seeds, walnuts, and a bit more salt and pepper. Mix until smooth. Serve warm or cold with your favorite veggies or crackers.
