Bulgur Tabbouleh Salad

Tabbouleh salad is a classic dish in the Middle-Eastern cuisine. It is a very refreshing salad, very lemony, s

uper healthy and delicious. It is a great side dish or appetizer that is colorful and smells amazing. If you want to impress your guests....this is a good one!

In this recipe I kept the calories on the low side by using less bulgur and more veggies. You can always use more bulgur if you prefer.



2 cups of soaked bulgur - 

( 1 cup dry bulgur soaked in 1 cup of boiling water)

1 long carrot thinly cubed

2 Roma tomatoes thinly cubed

1 yellow pepper thinly cubed

1 red bell pepper thinly cubed

2 green onions thinly chopped 

1/2 cup fresh chopped parsley

1 tablespoon hemp seeds.


Juice and zest of one lemon

1 tablespoon olive oil





Mix all the salad ingredients together.

Mix all the dressing ingredients and pour over the salad.

Serving suggestion: Take whole leaves of fresh romaine lettuce, scoop some of the Tabbouleh on top, and servE.
