Almond Feta Cheese

Great alternative for feta cheese, just much healthier and tastes better (and it's vegan!).

I made it the other day and my son was all over it! He loved it so much! If you expose your kids to good alternatives that are better for them, you win.

Super easy to make! 

 

Ingredients:

1 cup soaked slivered almonds (24 hours in the fridge)

1 clove of garlic

Juice of 1 lemon

2 tablespoons olive oil

1/4 cup water

Salt

Pepper

 

Directions:

Drain the almonds.

In a food processor, add all the ingredients and let it whip for at least 15 minutes. From time to time stop and scrape the sides. When the texture gets creamy enough, it's ready.

Serve on a fresh baguette or with your favorite veggies. Sprinkle with some pepper and if you wish some more olive oil--healthy and delicious!
