Winter Greens Salad with Beets, Pomelo, and Pine Nuts

When Pomelos are in season, I buy them all the time. They remind me of my childhood; my parents have a Pomelo tree in their backyard, and my mom used to peel them for me when I was a kid. When we arrived to the US, I was so happy to find Pomelos at Costco. The name is the same but they are completely different than the ones in Israel. In Israel they are white inside and very sweet; here in the US, they are red inside and a bit more sour (I still love them though, and so do my children).

Most of the time we just eat them plain, but other times, I'll combine them in a dish, like I did today with this salad. The combination of beets, greens, Pomelo, and pine nuts is awesome. Healthy, energizing, and simply good!

Now to the salad recipe:

 

Ingredients:

4 cups of mixed greens- kale, spinach, arugula

1/2 cucumber cubed

3 beets cooked and cubed

1 cup alfalfa and clover sprouts

3 segments of pomelo

1/4 cup roasted pine nuts

For the dressing:

1/2 cup fresh chopped cilantro

1 tablespoon olive oil

Zest and juice of 1/2 a lemon

1 tablespoon veganaise

Salt

Pepper

 

Directions:

In a salad bowl lay the greens, then cucumber, beets, sprouts, pomelo and pine nuts.

Mix all the dressing ingredients separately and pour over the salad. Mix and serve.
